6 Whiting Fish Fillets
Old Bay Seasoning
Limes
1 tsp Black Pepper
Gluten-Free Flour
BBQ Pork Rinds
1 Egg
1 tbsp Parmesan cheese
1 tsp Parsley Flakes
1 tsp Red Pepper Flakes
Canola Oil
Salt (Optional) I don't cook with salt
Squeeze limes on fish (to clean it) wash it off with cold water (not too much water & be gentle with the fish). Throw off all excess water-season fish with 1 tablespoon old bay seasoning
Crush pork rinds in the bag until they are like bread crumbs
In a small bowl beat one egg for about 45 seconds
In another large bowl or pan combine 1/2 cup flour, Parmesan cheese, black pepper, red pepper flakes, & parsley flakes. Stir crushed pork rinds to this mixture.
In a frying pan, pour a half cup of canola oil and let it get really hot.
Dip fish fillets (one at a time) in egg, then coat each one with your flour & pork rind mixture. Place in very hot oil. Fry on both sides about 4 minutes or until crispy.
Put two paper towels on a plate and when fish is removed from oil, place the fish on the towels to catch the excess oil.
Try it! We had it tonight for dinner with broccoli and butternut squash. FAB!
